Chickpea-quinoa salad, 2 portions:

3 tomatoes

1 onion

lemon, parsley, salt and pepper

1 avocado

200g cooked quinoa

150g uncooked chickpeas

Broccoli and cashew stirfry, 2 portions:

2 bellpeppers

1/2 broccoli

500g tofu

1 onion

40g cashews

soy sauce

80g brown rice

Chili, oil, half a spoon of sugar or teriyaki sauce

Eggplant meatballs with zucchini and pasta, 3 portions:

2 zucchinis, oven baked

3x40g dry wholewheat pasta

Vegan Eggplant Meatballs

Seitan-pineapple curry, 3 portions

Seitan 250g

Sprouts 300g

cashews 30g

scallions, 3

curry paste

150g coconut milk (do not go overboard!! this is sooo calorific)

3x40g dry brown rice

1.5 cup pineapple

300g bamboo shoots


500g canned chickpeas or 3/4 cup dried

oil, salt, pepper, lemon juice, parsley, cumin

8 tb tahini

1/8th pumpkin
